Well, it’s rhubarb time again here. Since my step-son loves anything rhubarb, I’d thought I’d brighten up the breakfast table with some rhubarb jam. Since he also loves mango, this recipe was double delicious. The recipe is from the German Thermomix recipe forum http://www.rezeptwelt.de. Use your google translator if you don’t speak German to flick through the recipes. There are some really good ones.
Ingredients:
500g peeled rhubarb, cut into chunks
500g peeled mango, in chunks
500 g jam sugar 2:1
1 tbsp lemon juice
Directions:
1. Add the rhubarb chunks to the Thermomix bowl. Chop 5s/speed 5. Push down any stray bits of rhubarb with the spatula.
2. Add the mango chunks, jam sugar and lemon juice. Mix 3s/speed 5. Use your spatula to push everything down before cooking.
3. Cook 14m/100C/soft stir.
4. Pour into jam jars, close tightly and turn upside down for 5 minutes.
Devour.
I never would have thought to combine mango with rhubarb, but I can imagine the combination being delicious! Sweet and tart.
Sweet, tart and very fruity:) It’s so easy to make and a really good present for neighbours who love jam.
It’s great that there are Thermomix recipes all over the internet and even books that can be bought. That’s one of the first things I did before buying a Thermomix, I checked out some of the things you can make with the machine and I wasn’t disappointed.
