Well, it’s rhubarb time again here. Since my step-son loves anything rhubarb, I’d thought I’d brighten up the breakfast table with some rhubarb jam. 500g peeled rhubarb, cut into chunks
500g peeled mango, in chunks
500 g jam sugar 2:1
1 tbsp lemon juice
1. Add the rhubarb chunks to the Thermomix bowl. Chop 5s/speed 5. Push down any stray bits of rhubarb with the spatula.
2. Add the mango chunks, jam sugar and lemon juice. Mix 3s/speed 5. Use your spatula to push everything down before cooking.
3. Cook 14m/100C/soft stir.
4. Pour into jam jars, close tightly and turn upside down for 5 minutes.
