Due to a busy school schedule the first day of my vegan pledge (1st November) found me totally disorganised. I made the potato pakoras (recipe on this site) and a rather good carrot cake from this site:

I didn’t have any whole nuts so I just reduced the amount of sugar from 1 1/4 cups to 1 and added three generous tablespoons of cocoa. It has been an enormous hit here just like the chocolate zucchini cake that I made a week ago from the cookery book ” Color me Vegan” by Colleen Patrick-Goudreau which can be found here: http://www.capriciousyogi.com/2011/01/rockin-recipes-vegan-chocolate-zucchini.html. Just don’t slice it before it’s completely cold otherwise it will crumble horribly…
