Balsamic vinegar and orange juice dressing (Thermomix)

First day back at school today after the Easter holidays and I am in no mood to cook. This is a recipe from the German Thermomix recipe database submitted by a forum member, sa-anne. I used frozen chives (ready chopped) because our local supermarket only gets fresh deliveries from Tuesday to Saturday which means that the fruit, vegetables and herbs lying on display are all from last week (It’s Monday today). Use fresh chives if you have them.

Ingredients:

100g olive oil

200 g balsamic vinegar, brown or white (I used white)
200 g orange juice
5-10 g mustard, medium hot (or more to taste)
3 tbsp of frozen, chopped chives (or equivalent fresh)
15 g maple syrup (or honey)
2 pinches of freshly ground pepper
1/2 tsp salt (or more to taste)
a little sugar to taste (original recipe calls for artificial sweetener – yuck)
1 clove of garlic (if desired)

Preparation:

1. Mince peeled garlic clove (if used) in Thermomix bowl 5 seconds/speed 5.  (I chopped by hand).

2. Add the fresh or frozen chives to the garlic clove.

3. Add the remaining ingredients and mix for 10 seconds on speed 6. Pour into a bottle or container for storage in fridge.

According to the original recipe, this dressing will keep in the fridge for 2 weeks. Stir before use.
