I made these as an antipasto for my husband’s birthday party. The recipe is from http://www.chefkoch.de and serves 2 people. They are quick to make and utterly delicious. If you can’t get shallots, you can only find expensive varieties or you can’t face peeling the little beggars, use red onions instead.
250g shallots or red onions
1 tbsp runny honey
20g olive oil (original recipe calls for butter but that congeals when cold)
4 tbsp dark balsamic vinegar
salt and vinegar
2 sprigs of thyme, fresh (I used dried)
Peel the shallots and slice once lengthways. Heat the runny honey and oil in a pan, add the shallots, season with pepper, salt and thyme. Fry on medium heat for about 2 minutes. Give the shallots a good stir now and again. Add the balsamic vinegar and cook for another 5 minutes on a low heat, while stirring occasionally. Plonk in a serving dish and set aside to cool.
