Carrot bread with linseed and wild garlic (Bread machine)

This recipe is loosely adapted from one published in Bread Machine Magic by Linda Rehberg and Lois Conway that I bought to accompany my bread machine.

Ingredients for a 1 1/2 lb loaf:

1/2 cup water

3/8 cup soya milk or similar

2 cups of wholewheat flour (grind whole grain 1 min/sp10 before starting recipe)

1 cup bread flour (I used white because I’m using it up at the moment)

1 1/2 tsp salt

2 tbsp linseed oil or similar

1 1/2 tsp honey or other sweetener

2/3 cup grated carrot (add big carrot in chunks to TMX and chop 2-3s/sp 8 )

5 large leaves of wild garlic (or add herbs of choice like dill, thyme, parsley)

1 1/2 tsp active dry yeast

1 handful of linseed, whole

Directions:

Add all the ingredients to your bread machine. I used the basic dough cycle which takes about three hours in total.
