Wholemeal spelt rolls (vegetarian)

I discovered this recipe on the German Thermomix forum http://www.wunderkessel.de. It’s quick to make, just stir the ingredients, leave to rise for an hour, form rolls, leave to rise again for 30 minutes and then bake. The author says they are very filling. You’ll get around 13-16 small rolls with this recipe. I was lazy and simply made a loaf of bread, baking it for around 40 minutes. It contains honey, cream and butter, so it’s not vegan.

Ingredients:
700g spelt or wheat grains
2 t salt
1 T honey
1 cake of yeast or 2 sachets dried yeast
300 ml water
100 ml cream
1 T butter
1 T vinegar

Preparation:

1) Mill the spelt or wheat in the TMX in two portions on speed 10 until finely ground. Set aside.
2) Add all the other ingredients EXCEPT the vinegar to the TMX. Pour the flour on top and add the vinegar.
3) Now knead the bread on the dough cycle for 3-4 minutes. You may need to use the spatula to push down the ingredients in the beginning.
4) Place dough in oiled bowl. Allow to rise for 60 minutes. Then form the dough into 16 rolls on a baking sheet lined with baking paper and allow to rise another 30 minutes. Then spray with water and bake for around 30 minutes at 180 C.
